The queen of Ibérico ham. Though smaller than the Ham, its characterized for its juiciness and flavor.
It comes from pigs that roam our pastures and follow an acorn based diet during their roaming season or la Montañera. This, coupled with the unique conditions that exist in La Alberca, brings out the flavor and quality.
